Ingredients:
- 4 TBSP butter
- 2 onions
- 4 cloves garlic
- 3 c. ketchup
- 1 (29 oz.) can tomato sauce
- 2 1/2 c. red wine vinegar
- 1 c. unsulfured molasses
- 3 TBSP hickory flavor liquid smoke
- 3 baby back rib racks
Seasoning Ingredients:
- 2 1/2 c. brown sugar
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp chili powder
- 2 tsp paprika
- 1 tsp celery seed
- 1/2 tsp ground cinnamon
- 1 tsp cayenne pepper
- 2 tsp salt
- 2 tsp pepper
INSTRUCTIONS
- Before leaving home, mix the seasoning ingredients in a container until blended and seal. Transport to the campground to use when you’re ready to cook.
- Wash and dry all produce. Chop the onion and mince the garlic.
- In a large sauce pan, over medium heat or your campfire, melt the butter and thoroughly coat the bottom.
- Add in onions and garlic to sauté until translucent and fragrant.
- Next, add in the ketchup, tomato sauce, red wine vinegar, molasses, and liquid smoke.
- Stir until thoroughly combined and smooth.
- Add the seasoning mix that you made from home and shimmer until the sauce has thickened – 20 minutes.
- Remove the silverskin from the ribs, if necessary, and cut to fit into the Dutch oven.
- Build up your fire and add coals to the fire to heat.
- Pour the sauce over the ribs and stir to thoroughly coat. You’ll need to rotate the ribs a few times during cooking to ensure they all get nice and tender from the sauce.
- Arrange the coals to set the Dutch oven over them and top with a lid. Add coals to the lid to ensure even cooking.
- Simmer for 4-6 hours, being sure to monitor the ribs and rotate to prevent charring.
- Serve hot and with baked beans, potato salad, roasted corn, or whatever sides you love!
