INGREDIENTS
- 1 lb. broccoli florets
- 1 lb. cauliflower florets
- 1 cp. panko breadcrumbs
- 1/4 cp. melted butter
- 1 tsp. thyme
- 1 tsp. oregano
- 1/2 tsp. cayenne
- 1 tbsp. smoked paprika
- 1 tsp. black pepper
- Salt to taste
- 1/2 lb. Velveeta cheese
- 1/4 lb. Camembert cheese
INSTRUCTIONS
- Wash and dry all produce.
- Cube the cheese and set aside.
- Preheat the oven to 450F.
- Bring a large pot of salted water to a boil over medium-high heat.
- Add the broccoli and the cauliflower, and boil for 3 minutes to blanch it.
- Drain thoroughly and add to an ice bath to stop the cooking process.
- Dump onto a paper towel to dry.
- In a small bowl, combine the panko breadcrumbs, room temperature butter, thyme, oregano, paprika, cayenne, salt and pepper. Mix until thoroughly combined.
- Using an 8×11 baking dish, spray the dish with cooking oil and add the broccoli and cauliflower.
- Add the chunks of cheese to the veggies. Try to evenly spread the cheese throughout the dish.
- Top with the panko breadcrumbs and wrap the top in foil.
- Bake for 15-20 minutes until the cheese is melted.
- For the last 5 minutes of cooking time, remove the foil to allow the top to brown.
- Remove from the oven and let rest for 5 minutes before serving!
