Thanksgiving Recipe: Low-Carb Cauliflower Broccoli Cheese Bake

Broccoli cheese bake

INGREDIENTS

  • 1 lb. broccoli florets
  • 1 lb. cauliflower florets
  • 1 cp. panko breadcrumbs
  • 1/4 cp. melted butter
  • 1 tsp. thyme
  • 1 tsp. oregano
  • 1/2 tsp. cayenne
  • 1 tbsp. smoked paprika
  • 1 tsp. black pepper
  • Salt to taste
  • 1/2 lb. Velveeta cheese
  • 1/4 lb. Camembert cheese

INSTRUCTIONS

  1. Wash and dry all produce.
  2. Cube the cheese and set aside.
  3. Preheat the oven to 450F.
  4. Bring a large pot of salted water to a boil over medium-high heat.
  5. Add the broccoli and the cauliflower, and boil for 3 minutes to blanch it.
  6. Drain thoroughly and add to an ice bath to stop the cooking process.
  7. Dump onto a paper towel to dry.
  8. In a small bowl, combine the panko breadcrumbs, room temperature butter, thyme, oregano, paprika, cayenne, salt and pepper. Mix until thoroughly combined.
  9. Using an 8×11 baking dish, spray the dish with cooking oil and add the broccoli and cauliflower.
  10. Add the chunks of cheese to the veggies. Try to evenly spread the cheese throughout the dish.
  11. Top with the panko breadcrumbs and wrap the top in foil.
  12. Bake for 15-20 minutes until the cheese is melted.
  13. For the last 5 minutes of cooking time, remove the foil to allow the top to brown.
  14. Remove from the oven and let rest for 5 minutes before serving!
